Roxy louw found herself doing yoga in costa Rico back in 2007 with the Oakley international surf team as a surfer but it wasn't  until 2014 that the spirit of yoga really grabbed her. 
"I don't know why I didn't take to teaching earlier as there is nothing more rewarding than leading a yoga class and watching the transformation happen. "
I get the exact same mind, body, soul connection on my mat that I get when I'm in the water. 
She now surfs her energy in the natural ease that she rides the waves. 

After deciding to take it a step further and spend 2 months in Thailand where she qualify for her YTCC 200 hours in in all styles of yoga. 
She has come to teach a "surf vinyasa flow" that aims at adamant surfers that need cross training or beginners wanting to embrace the surf culture without having to get into the cold water and face the sharks. 
She also teaches power yoga and gentle restorative vinyasa. 

Coming from the health background alongside Kauai health food as an ambassador and the original face, Roxy has now started her own company embracing this lifestyle "greenleafvitality" where she host retreats, corporate yoga events, boot camps, workshops, surf & yoga retreats and is soon to launch a studio in the up and coming months in the cape wine lands. 
Also having qualified as reiki healer and nutritional therapist after dealing with her father, ex rugby player Rob louw's battle with cancer. Roxy found her calling and love for healing. 
She believes healing happens when the correct elements are in place. 
This is the base of all her retreats where she combines juice, yoga, hikes and wholesome vegetarian food in a relaxed environment over pop up weekends.

Low Carb / Banting Carrot Cake Recipe:

Preheat the oven to 180C and prep a baking tin:

FOR THE CAKE: Combine all the dry ingredients. Not xylitol
Combine all the left over ingredients in a separate bowl.
Mix the wet and the dry mixture together. Pour the mixture into the tin and bake for 30 minutes.
FOR THE FROSTING: Blend all ingredients together. 

3 cups  Flax Flour
0.5 tsp  Salt
1 tsp.    Bicarb
1 Tbsp. Cinnamon
1 tsp.     Nutmeg
1 tsp.     Ginger powder
2 Tbsp.  Vanilla
6 eggs
1.5 cup.  Xylitol
4 Tbsp.   Coconut Oil
3 cups.    Grated Carrots
1 cup.   Chopped Nuts


230g.  Cream Cheese
0.5 cups Cream
0.5 cup
1 Tbsp

After a month of sweat, tears and an amazing experience doing my YTTC (yoga teacher training) on Koh Tao, Thailand I decided to do a cooking course that was offered to me as part of the 'package ' at the beautiful villa on "PANACEA"resort, Koh Samui.

The Accommodation was beyond my expectation and the perfect end to my Thailand trip.

"PANACEA" is set on a hill top, overlooking the beautiful coast of Bophut. 

The villa I booked, hosts 4 couples/ rooms to their own double bed en suite with a full board mini bar serviced each day. 

This was the perfect opportunity to treat some friends from the course to an amazing 3 days of massage, food, more yoga, shopping and down time in the luxurious Kalya residence before heading our separate ways. 

Each villa on the resort boasts its own private garden with organic fruit. I made it up a tree after learning how to make the salad to grab a green papaya. 

We had a private 20m infinite pool overlooking the ocean and jungle where I could float and swim laps before indulging in the delicious breakfast freshly prepared by the friendly staff in the privacy of our own, fully equipped kitchen and dining room.

Winter warming soups:

Hey friends, sorry that I have been so lazy with updating my blog over the last few months...
It's think the winter has put me in full hibernation <blush>.
With saying so, I thought I would share some winter warming soup recipes with you.
It's super easy, vegan, paleo, banting friendly and healthy.

Broccoli soup:

1 litre vegetable stock
1/2 diced onion
250g frozen peas
125ml coconut cream
500g broccoli

Fry the onion, add broccoli, peas and the rest of the ingredients, blend.

Thai curried soup:

Vegetable stock
Baby marrow/zucchini
Thai green curry paste
coconut cream
Coriander (optional)

fry onion, garlic, ginger, Thai green curry paste •add zucchini and spinach •add stock or broth •blend •add coconut milk and some #dhania #cilantro #coriander to taste.

What I have learnt on my 30 day's of eating ANTI CANCER?

*Its impossible to only drink red wine
*Sugar is highly highly addictive, this was my toughest one!
*I don't need gluten in my life.
*My mood is amazing, I feel great! Its a few stabilised without the highs and lows of the sugar.
*There is sugar is EVERYTHING!!! Read your labels.
*I tried allot of new recipes by cooking and entertaining at home. Its been fun and way more engaging than eating out.
*Im pushing on for longer :-) …~After some dark chocolate~. haha

Im way happier than I have ever been and feel so much 'lighter' Yoga has been a breeze this month.
Only drinking red wine didn't last well. I stayed away from any processed juices, cocktails and additives and drank only clean vodka soda on the odd occasion or whiskey and water. Red wine alone is very rich...

I lost 2KG of weight and a few centimetres, but this wasn't my motive.
I learnt so much! Just talking to people at random about the pink hair piece and the anti-cancer month got allot of conversations rolling.
There is always something new to learn!!!

Week 2 “Roxy Louw Pink October”: Half way there…

I am feeling great, way better than I did last week. No more cravings for dates and fruit. 
No more headaches and a way better mood!!! haha
I spent the first week playing around and figuring out recipes to substitute for my regular meals and week two has been much easier.

 I have taken in more calories than I would usually do with the added smoothies, gluten free seed bread and almonds.

MY STATS: My weight is the same. I have lost 'cm' though which is interesting.
I went surfing on the weekend and my board knocked me terribly in my face. 
Where I usually bruise very badly, I have come out pretty good. It has healed so quickly!!!
I guess its all the vitamin K that I have been consuming...
I was also on the road for the last week but managed to still substitute pretty well.

HERE IS TO THE 2nd Faze!!! Excited to see how this turns out with added hot yoga thrown in the Mix.
