CURRY RECIPE

My favourite dinner recipe...

This must be my favourite dish! I just love it! I have given two variations.



BASIC THAI CURRY RECIPE:

Ingredients

1 Tbs cooking oil

1 onion, chopped

2 Tbs curry paste 1 ½ cup coconut milk

½ Cup chicken stock

500g chicken breast fillets, cut into bite-size pieces

1 Tbs fish sauce

1 Tbs lemon juice

2 tsp brown sugar

Method

1.Heat the oil in a wok.
2.Add the onion and curry paste to the wok and cook for 1 minute, stirring constantly.
3.Add the coconut milk and stock to the wok and bring to the boil.
3.Add the chicken pieces, and the extra adding to the wok, stirring to combine.
4.Reduce the heat and simmer for 15 to 20 minutes or until the chicken is cooked.
5.Now add the fish sauce, lime juice, lime rind and sugar to the wok, stir to combine.
Serve on basmati rice with fresh coriander or with rice noodles.


FOR GREEN CURRY, ADD (STEP3):

 Egg plant

Broccoli

Baby marrows

Sweet Basil

fresh coriander

As desired


FOR YELLOW CURRY ADD:

Ginger

1 cup Orange juice

500g Butternut and Sweet potato mix (cooked soft)

500ml plain yogurt
